
Our latest start-up project is Bier Edinburgh, which is now finally underway, after a bit of a delay, thanks to covid. The Keller forms part of a complex of buildings just off Picardy Place in Edinburgh, with the Bier Edinburgh Brewery situated in a specially designed brewing area just off the main bar and visible through a large glass door. The Keller has no outside walls, so extraction of steam, heat and carbon dioxide was a challenge. We managed to get sufficient ventilation to keep the venue both cool and safe whilst brewing and find a route to get the steam from the Copper out of the building.
The first two brews: a Pilsner style lager and a classic Pale Ale (both yet to be named), are currently fermenting nicely and will be ready for kegging in a couple of weeks. These are the first two of four core beers which will be regularly available, supplemented by seasonal specials.
